Delicious Easter Doves

There is one very special artisanal cake which signals the coming of spring in Italy and is particularly associated with Easter.  It is known as La Colomba di Pasqua, or the “Easter Dove" and is as popular across Italy as the Panettone is at Christmas time. 

   

The iconic dove-shaped cake is rich and fluffy, made with natural yeast, rich golden eggs, butter and carefully sourced flour. Each cake is studded with tasty ingredients, such as candied fruit, nuts, chocolate or cherries.  The one pictured here which was purchased by the UK office for research reasons (!) is studded with Crema Pasticcera which is one of the most delicious fillings ever invented by man!

Unusually for traditional Italian specialities, most people do not bake them at home but buy them from expert local bakers, and they are always lavishly wrapped in colourful paper and beautiful ribbons. They can be enjoyed with fresh berries, drizzled in dark chocolate or eaten with whipped cream, but a slice of Colomba is delicious on its own with a coffee, or with a glass of Prosecco or a sweet wine.

   

The origins of La Colomba are unclear but the first one is believed to have come from Milan and there are many legends about the inspiration for this symbolic, peace-inspiring cake.  Wherever it came from, it is light and delicious and heralds the coming of spring and the celebrations of Easter.  If you have the chance to try one this year, then take it and enjoy it.
